Glazed Ham with grapefruit and fennel
paired with Dashwood Sauvignon Blanc

Glazed Ham with Dashwood Sauvignon Blanc. The 'Weekend Chef' series, hosted by Nourish Group executive chef Gareth Stewart, was created in response to friends always sounding them out for ideas on 'great dishes that they could make on the weekend.

Recipe serves 12 - 15

Ingredients:
1 Whole baby ham approx. 2.5kg
30 each Whole cloves
3 Tbsp Chopped fennel foliage
1 grapefruit sliced thinly
Water as required 
 
Glaze:
2 Cup Orange juice
1 Cup water or vegetable stock
1 ½ Cup Brown sugar
1 cinnamon quill
1 Tbsp mixed spice
60g Butter  

To make glaze, heat all ingredients together and let infuse for 20 minutes before using.

Pre heat oven to 160 degrees
Prepare ham by carefully removing the skin and then scoring the fat in a criss cross pattern on the ham with a sharp pointed knife. Place the cloves into the ham like a tack.
Slice grapefruit and put on the bottom of pan lined with baking paper and place the ham on top.
Sprinkle the ham with the chopped fennel and pour some water into the bottom of the tray just enough to cover the bottom, and place into the oven.
Cook for 2 ½ hours while spooning over glaze at intervals during the cooking process after the initial 40 minutes. Baste with water and flavor that falls to bottom of the pan and continue to cook till hot all way though and a nice caramelized outside.
Remove and serve on a board for guests to enjoy
