Tuna Poke with
Dashwood Pinot Gris

The 'Weekend Chef' series, hosted by Nourish Group executive chef Gareth Stewart, was created in response to friends always sounding them out for ideas on 'great dishes that they could make on the weekend.'

Recipe serves 4

Ingredients.
Serves four
400g Raw yellow fin tuna
1  Avocado
2 table spoons sesame seeds black/white
1sml Red onion
2stalksSpring onion
30gr Lebanese cucumber – Sliced
12 Cherry tomatoes
6 Radish – Red
3gr Wakame - Dried
6-8Edible flowers.

Poke dressing: 
¼ cup Light soy
2tblsp Sesame seed oil
2tblsp Rice wine vinegar
2 Lime juice 

How to make:
Cut the tuna into a large dice and keep on ice or refrigerated.

Finely slice the red onion and spring onion and place in a mixing bowl along with the deseeded and sliced cucumber, quartered radish and halved tomatoes. Combine the tuna in to the salad and dress generously with the dressing. Gently fold in the sliced avocado being carful not to allow the avocado to break up too much. Sprinkle the wakame over the top and garnish with any flowers you may have.

Serve straight away.
